Parsnip, onion & mushroom fry, with fried eggs
I hadn't made my penne dish in about three weeks, with all the travelling and such, so it was time to make it again, this week. I made it with mince, onions, parsnips, mushrooms, and tomatoes, this time, and had some parsnips and mushrooms left over..
Sooo.. I thought I'd fry some of them, and it turned out really nice! (Parsnip is a little bit sweet, like carrot, so if you don't like any sweetness in your food, then this is probably not for you..) I ate it with two slices of whole grain bread, which is not pictured.
Quick and easy, for one person;
Chop two parsnips and fry them in olive oil, on low heat. Chop an onion, turn up the heat, add the onion, chop 2-3 mushrooms, add them.. I seasoned with Herbamare (herbal salt), white pepper, and black pepper. When it's done, put it on a plate, and quickly fry two eggs for it. I think it's best with bread, but use whatever works for you.. =)

ReplyDeleteI don't think I have ever tried parsnip, so thanks for saying that it is sweet...I will like it, then. Bitter I am not too fond of. This looks really good, I think I will be trying this soon. Love the photo, great presentation. I love my eggs sunny side up.
It's a bit like "white carrot" - similar shape and size, similar (slight) sweetness to it.. But parsnip has slightly different texture, being generally a bit softer and "fleshier" than carrot.
DeleteThey actually go really well together - carrot and parsnip. It's common to see them sold together, and we usually have them (roasted) with Sunday dinner.
I made this same food again, yesterday, only this time my eggs didn't look quite as pretty as you can see in my Facebook photos.. =D
Stella, I often have turnips and carrots together...the turnip is the Rutabaga one, purple and yellow. Perhaps the parsnip is similar to that?
